Tetsu asked the crew to cater his family’s get-together. “Just immediate family,” he said. Then the truck pulled up to a hall packed with three generations of relatives, all ordering at once.

So November’s menu is built for everyone at the table: a cozy Chicken Nanban, a classic Rice Ball and crispy Vegetable Tempura.
